The Cataria Project
In 2016, Basque chef Aitor Arregi decided to expand the grill universe from the north to the south. Cataria emerged from this initiative.
Elkano* is well known for its veneration of Getaria’s sea produce, but the captain of this gastronomic vessel realised that fish meriting a place on his grill did not arrive at his home port only. In search of other gastronomic shores, Arregi headed off to Chiclana (Cádiz) to open a sea-produce restaurant, this time in southern climes.
With Arregi we will see that each sea offers something different, and how the produce should be treated, respected and appreciated. We will explore the mission of a restaurant on the coast which keeps a careful watch on the sea.
