Faithful to his work examining the sea, Ángel León continues to seek maritime resources for our future pantry.
Word of a marine cereal and the possibility of creating marine market gardens marked a turning point in the research conducted by Ángel León’s team alongside the University of Cádiz. Marine eelgrass is the outcome of many years of investigation, but it is only the beginning of a trajectory to find crops in the sea that the land can no longer cater for.
We will be sure to talk of the possibilities of these crops, their gastronomic applications and the new facets the sea chef is bound to report to us.
